Breaded tomatoes with mozzarella

3 copper tomatoes (firm)
120 g mozzarella
1 egg
q.s flour
Breadcrumbs to taste
Peanut oil to taste
Salt to taste

How to make breaded tomatoes with mozzarella?

Wash the tomatoes and cut into 1 cm-thick slices. Pat dry with paper towels. Cut the mozzarella into 1 cm-thick slices. Place on a slice of tomato. Cover the mozzarella with another tomato slice to form a sandwich.

Beat the egg with a fork. Prepare the flour on one plate and the breadcrumbs on another. Dip the tomatoes first in the flour, then in the egg and finally in the breadcrumbs.

Heat the oil in a frying pan and, when hot, fry the tomatoes, no more than two at a time, to avoid lowering the temperature of the oil. When the tomatoes are golden, remove them from the oil with a slotted spoon. Place on a piece of kitchen paper. Add salt to the surface. The breaded tomatoes with mozzarella are ready to serve.
