Breaded zucchini and ham roll

700 g zucchini (without scraps)
40 g Parmesan cheese (grated)
1 mozzarella
100 g cooked ham
120 g breadcrumbs (approx.)
2 eggs (medium)
Salt to taste
Basil to taste

How to make the breaded zucchini and ham roll?

Wash zucchini, peel and weigh 700 g. Using a mandolin, cut into thin slices. Sprinkle with salt and leave to stand in a colander for around 45 minutes. In this way, they will lose their water content.

After this time, squeeze the zucchinis with your hands. Place them in a bowl and add the breadcrumbs. Mix well. Mash the zucchini. Finally, add the eggs, grated cheese, half the chopped cooked ham, a pinch of black pepper and chopped basil leaves. Knead. Pour mixture onto a sheet of parchment paper. Make a hollow in the center and insert the remaining slices of cooked ham and diced mozzarella. Form a roll with your hands and seal with parchment paper.

Place the breaded zucchini and ham roll in a cake tin with all the parchment paper. This way, it won’t lose its shape during baking or open up. Transfer the tin to a hot oven at 180° -190° and bake for around 50 minutes.

Once finished, remove the breaded zucchini and ham roll from the oven and remove the parchment paper. To make it more golden, broil for about 5 minutes at 190°. Alternatively, serve warm, sliced.
