5 eggs
200 g sugar
220 g almond flour
60 g cornflour
1 sachet baking powder
150 g white chocolate
100 ml oil
2 lemons
30 ml lemon juice
200 g lemon custard
q.s powdered sugar
sliced almonds

How to make a flourless white chocolate and almond cake?

Whisk the eggs with the sugar for 20 minutes at high speed until frothy and fluffy. Add the oil, lowering the whipping speed. Add the sifted cornflour and yeast and mix by hand. Gradually add the almond flour and mix with a hand spatula. Add the grated zest of the two lemons, the lemon juice and the finely grated white chocolate. Continue mixing by hand until everything is well incorporated. Pour the mixture into a buttered and lightly floured 30 x 30 cm square or 24 cm round tin.

Bake at 180 degrees for 40-45 minutes. Once the cake is ready, leave to cool and cover with lemon cream. To finish, add the sliced almonds. Serve the flourless white chocolate and almond cake.
