3 large zucchinis
3 tablespoons grated Parmesan cheese
3 tablespoons breadcrumbs
12 cherry tomatoes
1 tablespoon salt capers
150 g black olives
Extra-virgin olive oil to taste
Oregano to taste
Pepper to taste

Rinse zucchini, dry, remove both ends and cut into horizontal slices less than 1 cm thick. Cut cherry tomatoes into small pieces. Rinse capers to remove the salt in which they are preserved.

Turn the oven on to 180°. Line a large baking sheet with parchment paper and brush with oil. Place the zucchini slices on top and scatter over the tomatoes and black olives.

Mix the breadcrumbs with the grated Parmesan and add the ground bell pepper. Sprinkle each zucchini slice with the breadcrumb mixture. Arrange capers on baking sheet and sprinkle with oregano. Drizzle oil generously over all ingredients, especially the breadcrumbs. Bake in a hot oven at 180 degrees for approximately 20 minutes. Breadcrumbs should be golden brown.
