3 large zucchinis
150 g cherry tomatoes
250 g tuna in oil
Oregano to taste
Salt to taste
Peanut oil to taste
Extra virgin olive oil to taste

How to make zucchini rolls with tuna?
Wash zucchini under running water. Remove both ends of the zucchini. Remove the first thin slice and cut the zucchini into 2 mm slices with a knife or potato peeler.
Rinse the cherry tomatoes well and cut into very small cubes (about half a centimetre). Place them gradually in a bowl. Season with salt, extra-virgin olive oil, oregano and a few chopped basil leaves. Mix well and refrigerate to flavour. Drain the tuna.
Pour peanut oil into a large frying pan and heat over medium-high heat.
Prepare zucchini by flouring each slice on both sides. Fry in hot oil, browning on both sides. Drain gradually on a tray lined with paper towels. Add a little salt. For a lighter version, zucchini can be grilled.
Once all the zucchinis are cooked, let them cool slightly, then stuff them with tuna and cherry tomatoes on one end. Roll them up and place the rolls progressively on a tray, with the closing side down. Decorate with basil leaves.
