This hearty and nourishing stew is ideal for chilly days or whenever you crave a hearty and nourishing meal that reminds you of home-cooked goodness.
Ingredients:
- 2 lbs beef stew meat, cut into bite-sized pieces
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup red wine (optional)
- 2 tablespoons tomato paste
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 4 large carrots, peeled and cut into chunks
- 3 medium potatoes, peeled and cut into chunks
- 1 cup frozen peas
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Brown the Beef:
- In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the beef stew meat and brown it on all sides to develop rich flavors. Remove the beef from the pot and set it aside.
- SautΓ© the Onion and Garlic:
- The chopped onion should be sautΓ©ed in the same pot until translucent. Once fragrant, add the minced garlic and cook for one more minute.
- Deglaze and Add Flavor:
- Pour red wine into the pot if you’re using it to deglaze and remove the browned bits from the bottom. Allowing the wine to simmer will allow the alcohol to evaporate.
- Add the bay leaves, dried thyme, dried rosemary, tomato paste, and stir to infuse the stew with flavor.
- Simmer the Stew:
- Add the beef broth and put the browned beef back in the pot. Heat should be turned down after the mixture comes to a boil. For about 1.5 to 2 hours, or until the beef is tender and the flavors come together, simmer the stew with the lid on.
- Add Vegetables:
- To the stew, add the chunks of potato and carrot. Continue to simmer for a further 30 minutes, or until the vegetables are tender-crisp and the stew has slightly thickened.
- Add Peas and Season:
- Stir in the frozen peas and cook for a few more minutes until they are heated through.
- Season the Classic Beef Stew with salt and pepper to taste, adjusting the flavors to your preference.
- Serve and Garnish:
- Pour the hearty beef stew into bowls, then top each serving with a few fresh parsley sprigs for a colorful and flavorful garnish.
