Garlic Roasted Chicken and Potatoes

I’ve been making this recipe for so long that I’ve forgotten where I got it. It comes together in no time. My husband ‘discovered’ after several attempts that you were supposed to spread the garlic on the chicken. It’s now one of his favorites. This recipe is very simple to scale up or down. Just make sure your pan is large enough before adjusting. Because we like potatoes, I usually add more. Serve with a salad of mixed greens.

Ingredients:

  • 1 whole chicken (about 4-5 pounds), giblets removed
  • 1.5 lbs (about 680g) baby potatoes, halved or quartered if large
  • 6-8 garlic cloves, minced
  • 3 tablespoons olive oil
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1 tablespoon fresh rosemary leaves (or 1 teaspoon dried rosemary)
  • 1 teaspoon paprika
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • Lemon wedges and fresh parsley for garnish (optional)

How To Make Garlic Roasted Chicken and Potatoes

Preheat oven to 400 degrees F (200 degrees C).

Melt the butter in a roasting pan by placing it there. Place the chicken drumsticks and thighs, potatoes, and unpeeled garlic cloves into the roasting pan after the butter has melted and been swirled to coat the bottom of the pan. Add salt and pepper, then turn the chicken, potatoes, and garlic to evenly distribute the butter.

For about 40 minutes, bake the chicken in the preheated oven, basting it three times with pan drippings until the inside is no longer pink and the juices run clear. Chicken pieces should be covered in maple syrup, and potatoes should be covered in pan drippings.

Return to the oven and bake for an additional 20 minutes, or until the chicken and potatoes are cooked through and browned. A thick area of the thigh should register at least 165 degrees F (74 degrees C) on an instant-read thermometer. When ready to serve, squeeze the soft garlic from the baked cloves over the chicken. Over the chicken and potatoes, pour the pan juices.
