Ingredients:

For the meatloaf:

  • 1 1/2 pounds ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1/2 cup onion, finely chopped
  • 1/4 cup bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg, beaten

For the mashed potatoes:

  • 2 pounds potatoes, peeled and cut into chunks
  • 4 tablespoons unsalted butter
  • 1/2 cup milk or cream
  • Salt and black pepper, to taste

For the gravy:

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups beef broth
  • 1 teaspoon Worcestershire sauce
  • Salt and black pepper, to taste

Preparation:

  1. Set your oven’s temperature to 375°F (190°C). An empty loaf pan should be greased.
  2. All the meatloaf ingredients should be combined in a sizable mixing bowl. All the ingredients should be thoroughly combined.
  3. Shape the mixture into a loaf and transfer it to the loaf pan that has been greased.
  4. The meatloaf should be baked in the preheated oven for 50 to 60 minutes, or until it reaches a temperature of 160 F (71 C).
  5. Make the mashed potatoes and bake the meatloaf at the same time. Put the potato chunks in a big pot and add water to cover them. 15-20 minutes after bringing to a boil, continue cooking the potatoes until they are tender. Flow freely.
  6. In the same pot, melt the butter over low heat. Add the drained potatoes back into the pot and mash them with a potato masher until smooth.
  7. Gradually add the milk or cream to the mashed potatoes, stirring until the desired consistency is reached. Season with salt and black pepper to taste.
  8. For the gravy, melt the butter in a small saucepan over medium heat. Whisk in the flour and cook for 1-2 minutes until lightly golden.
  9. Gradually whisk in the beef broth and Worcestershire sauce. Bring the mixture to a simmer, stirring constantly until the gravy thickens. Season with salt and black pepper to taste.
  10. Once the meatloaf is cooked, remove it from the oven and let it rest for a few minutes before slicing.
  11. Serve slices of meatloaf alongside a generous portion of mashed potatoes. Drizzle the gravy over the meatloaf and mashed potatoes.
  12. Enjoy the comforting combination of Meatloaf and Mashed Potatoes with Gravy.
