Roasted Potatoes and Onions: A Quick and Easy Side Dish

  • 1 teaspoon garlic powder

Instructions:

  1. Preheat the Oven:
    • Preheat the oven to 425 degrees Fahrenheit (220 degrees Celsius). This high temperature will aid in the creation of crispy roasted potatoes.
  2. Prepare the Potatoes and Onions:
    • Thoroughly wash the potatoes and cut them into bite-sized chunks. To ensure even cooking, try to keep the pieces relatively uniform in size.
    • Thinly slice the onion and separate the rings to ensure even caramelization.
  3. Toss with Olive Oil and Seasonings:
    • Combine the potato chunks, onion slices, olive oil, dried thyme, garlic powder, onion powder, salt, and pepper in a large mixing bowl. Toss until the potatoes and onions are evenly coated with the oil and seasonings.
  4. Arrange on a Baking Sheet:
    • Spread the seasoned potato and onion mixture in a single layer on a large baking sheet. Avoid overcrowding the vegetables as this can prevent proper browning and crispiness.
  5. Roast in the Oven:
    • Place the baking sheet in the preheated oven and roast the potatoes and onions for about 25-30 minutes, or until the potatoes are golden brown and crispy on the edges. Stir the vegetables once or twice during the roasting process to ensure even cooking.
  6. Serve and Enjoy:
    • When the potatoes and onions have finished roasting, take them out of the oven and place them in a serving bowl.
    • Add a sprinkle of fresh herbs as a garnish for an extra flavor and visual appeal, like chopped parsley or chives.
