Ingredients:

  • 4 bone-in, skin-on chicken thighs πŸ—
  • 1 lb fresh green beans, trimmed 🌿
  • 4 tablespoons olive oil πŸ«’

  1. Preheat the Oven:

  3. Arrange on the Baking Sheet:
    • Place the seasoned chicken thighs skin-side up on one side of the prepared baking sheet.
    • Spread the lemon-garlic green beans on the other side of the baking sheet, ensuring they are in a single layer and not overlapping.
  4. Roast the Chicken and Green Beans:
    • Over the chicken thighs, add the final 2 tablespoons of olive oil. Half of the lemon juice should be squeezed over the chicken; save the remaining juice for another use.
    • When the chicken reaches an internal temperature of 165Β°F (74Β°C) and the skin turns golden and crispy, place the baking sheet in the preheated oven and roast for about 25 to 30 minutes. The green beans ought to have a light char on them and be tender.
  5. Garnish and Serve:
    • Remove the baking sheet from the oven once the chicken and green beans are perfectly cooked.
    • For an additional citrus flavor boost, add the remaining lemon zest to the roasted chicken and green beans.
    • Add freshly chopped parsley as a garnish for a touch of freshness.
