Ingredients (Serves 4):

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme (optional)
  • 1/2 teaspoon dried rosemary (optional)

For the Garlic Parmesan Rice:

  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Chopped fresh parsley for garnish

Instructions:

1. Prepare the Chicken:

  • Season the chicken breasts with salt, black pepper, garlic powder, paprika, dried thyme, and dried rosemary (if using).
  • In a skillet, heat olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 5-6 minutes on each side, or until cooked through. Remove from heat and set aside.

2. Make the Garlic Parmesan Rice:

  • In a saucepan, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  • Add the white rice to the saucepan and stir to coat the rice with the garlic-infused butter.
  • Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover the saucepan, and let the rice simmer for about 15-18 minutes, or until the liquid is absorbed and the rice is tender.

3. Add the Cheese and Garnish:

  • Remove the saucepan from the heat and fluff the rice with a fork.
  • Stir in the grated Parmesan cheese until it’s melted and well incorporated into the rice.
  • Season the rice with salt and black pepper to taste.

4. Serve and Enjoy:

  • Divide the Garlic Parmesan Rice among serving plates.
  • Slice the cooked chicken breasts and arrange them over the rice.
  • Garnish with chopped fresh parsley for a burst of color and flavor.
