Texas Tornado Cake: A Whirlwind of Flavor

The Texas Tornado Cake is a dessert that lives up to its name, creating a whirlwind of flavors and textures that’ll sweep you off your feet. Ingredients:

For the Cake:

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 cup buttermilk
  • 1/2 teaspoon vanilla extract
  • 1/2 cup chopped pecans

For the Coconut Pecan Frosting:

  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 1 cup evaporated milk
  • 1 teaspoon vanilla extract
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans

Instructions:

1. Preheat and Prepare:

  • Preheat your oven to 350°F (175°C).
  • Grease and flour a 9×9-inch baking pan or a similar-sized dish.

2. Make the Cake:

  • In a large mixing bowl, whisk together the flour, sugar, baking soda, and salt.
  • Add the egg, buttermilk, and vanilla extract to the dry ingredients. Mix until well combined.
  • Stir in the chopped pecans.
  • Pour the batter into the prepared baking pan and spread it out evenly.

3. Bake:

  • Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Remove the cake from the oven and allow it to cool in the pan.

4. Make the Frosting:

  • In a saucepan over medium heat, melt the butter.
  • Stir in the granulated sugar and evaporated milk.
  • Bring the mixture to a boil and cook for about 2 minutes, stirring constantly.
  • Remove the saucepan from the heat and add the vanilla extract, sweetened shredded coconut, and chopped pecans. Stir until well combined.

5. Frost the Cake:

  • While the cake is still warm, spread the coconut pecan frosting evenly over the top.

6. Let It Set:

  • Allow the cake to cool completely, allowing the frosting to set.

7. Serve and Enjoy:

  • Once cooled and the frosting has set, cut into squares and serve your Texas Tornado Cake.
