Old-Fashioned Rice Pudding: A Comforting Dessert Classic

Old-Fashioned Rice Pudding is a beloved dessert that has stood the test of time. This creamy and comforting treat combines simple ingredients to create a rich and nostalgic flavor. It’s the perfect dessert for when you want to enjoy the sweet memories of days gone by.

Ingredients:

  • 1 cup white rice (long-grain or medium-grain)
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup raisins (optional)
  • Ground nutmeg, for garnish (optional)

Instructions:

1. Prepare the Rice:

  • Rinse the rice under cold water until the water runs clear. This helps remove excess starch and prevents the pudding from becoming too gummy.
  • In a medium saucepan, combine the rinsed rice with 2 cups of whole milk and 1/2 cup of heavy cream.

2. Cook the Rice:

  • Place the saucepan over medium-high heat and bring the mixture to a boil.
  • Reduce the heat to low, cover, and simmer for about 18-20 minutes, or until the rice is tender and has absorbed most of the liquid. Stir occasionally to prevent sticking.

3. Make the Custard Base:

  • In a separate bowl, whisk together granulated sugar, eggs, vanilla extract, ground cinnamon, and salt until well combined.

4. Combine Rice and Custard:

  • Once the rice is cooked, gradually stir the custard mixture into the rice in the saucepan.
  • Add raisins (if using) for extra sweetness and flavor.

5. Cook the Pudding:

  • Continue cooking over low heat, stirring constantly, for about 5-7 minutes until the pudding thickens and the eggs are fully incorporated. Be careful not to let it come to a boil again.

6. Serve:

  • Remove the pudding from heat and let it cool slightly.
  • Serve warm or chilled, garnished with a sprinkle of ground nutmeg if desired.

7. Enjoy:

  • Spoon generous portions of Old-Fashioned Rice Pudding into bowls and savor the creamy, comforting goodness.

8. Storage:

  • If you have leftovers, store them in the refrigerator. Rice pudding can be enjoyed cold or gently reheated in the microwave or on the stovetop with a little extra milk to maintain its creamy consistency.
