Instructions :

1. Grate and Drain Zucchini:

  • Begin by grating the zucchinis using a box grater. Place the grated zucchini in a colander, sprinkle it with 1/2 teaspoon of salt, and let it sit for about 10 minutes. Afterward, use your hands to squeeze out as much moisture as possible from the zucchini.

2. Mix Ingredients:

  • In a mixing bowl, combine the drained grated zucchini, finely chopped onion, all-purpose flour, grated Parmesan cheese, breadcrumbs, beaten egg, garlic powder, dried oregano, and black pepper. Stir until all the ingredients are well combined.

3. Form the Patties:

  • Using your hands, shape the zucchini mixture into small patties or fritters, about 2-3 inches in diameter.

4. Heat the Oil:

  • In a large skillet, heat vegetable oil over medium-high heat. The oil should be hot enough to sizzle when you add the patties.

5. Fry the Patties:

  • Carefully place the zucchini patties in the hot oil, making sure not to overcrowd the skillet. Fry them for about 3-4 minutes on each side, or until they are golden brown and crispy. You may need to work in batches.

6. Drain and Serve:

  • Remove the cooked patties from the skillet and place them on paper towels to drain any excess oil.

7. Enjoy:
