Today, I’m sharing the recipe for a simply fabulous lemon cake that’s bound to add a burst of citrusy delight to your day. π This cake is light, fluffy, and perfectly tangyβa treat for your taste buds. Ingredients:
- 2 cups All-purpose flour
- 1.5 tbsp Baking powder
- 240g Unsalted softened butter
- 1 1/3 cup White sugar
- 4 Large eggs
- 1/2 cup + 1 tbsp Milk
- Zest of 2 lemons
- Juice of 2 lemons
Instructions:
- Prepare Dry Ingredients:
- In a large bowl, sift 2 cups of all-purpose flour for a light texture.
- Add 1.5 tablespoons of baking powder, sifting it into the flour.
- Mix well to ensure even distribution.
- Mix Wet Ingredients:
- In another bowl, beat 240g of softened unsalted butter with 1 1/3 cup of white sugar until light and fluffy.
- Add four large eggs one at a time, ensuring a smooth mix after each addition.
- Add Milk and Citrusy Goodness:
- Pour in 1/2 cup + 1 tbsp of milk while continuing to mix. The mixture may curdle, and that’s okay.
- Zest two lemons using a fine grater and add the zest to the mixture.
- Extract the juice from the same lemons and add it to the mixture.
- Combine Wet and Dry:
- Gradually add the dry ingredients to the wet mixture, gently folding with a spatula. Avoid overmixing to maintain the fluffiness.
- Prep for Baking:
- Preheat your oven to 180 degrees Celsius.
- Grease a cake tin with melted butter or line it with baking paper.
- Bake to Perfection:
- Pour the batter into the prepared cake tin.
- Bake in the preheated oven for around 45 minutes or until a toothpick inserted comes out clean.
