Hawaiian Pineapple Cake: A Tropical Delight ๐Ÿ๐Ÿฐ๐ŸŒบ

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs, beaten
  • 1 can (20 oz) crushed pineapple, undrained
  • 1 teaspoon vanilla extract

For the Cream Cheese Frosting:

  • 8 oz cream cheese, softened

Instructions:

For the Cake:

  • Preheat your oven to 350ยฐF (175ยฐC). Grease and flour a 9ร—13-inch baking pan.
  1. Mix Dry Ingredients:
  • In a large bowl, whisk together the flour, sugar, baking soda, and salt.
  1. Add Wet Ingredients:
  • Add the beaten eggs, crushed pineapple (with its juice), and vanilla extract to the dry ingredients. Stir until well combined.
  1. Pour into Pan:
  • Pour the batter into the prepared baking pan.
  1. Bake:
  • Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  1. Cool:
  • Allow the cake to cool completely in the pan on a wire rack.

For the Cream Cheese Frosting:

  1. Prepare Frosting:
  • In a mixing bowl, beat together the softened cream cheese and butter until smooth and creamy.
  1. Add Sugar and Vanilla:
  • Gradually add the powdered sugar, beating well after each addition. Add the vanilla extract and continue to beat until the frosting is smooth.

Assembly:

  1. Frost the Cake:
  • Once the cake has cooled, spread the cream cheese frosting evenly over the top.
  1. Optional Toasted Coconut:
  • If desired, sprinkle toasted shredded coconut over the frosting for an extra tropical touch.
  1. Decorate:
  • Garnish the cake with pineapple slices or wedges and maraschino cherries.
  1. Chill (Optional):
