Ingredients:

For the Taco Seasoning:

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1/2 cup water

For the Lasagna:

  • 8 small flour tortillas
  • 2 cups shredded Mexican cheese blend
  • 1 cup salsa (your choice of heat)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup sour cream
  • Fresh cilantro for garnish
  • Sliced jalapeรฑos for extra heat (optional)

Instructions:

Prepare the Taco Seasoning:

  1. Cook Ground Beef:
  • In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  1. Add Taco Seasoning:
  • Add the taco seasoning and water to the cooked ground beef. Simmer until the mixture thickens and is well seasoned. Set aside.

Assemble the Mexican Taco Lasagna:

  1. Preheat Oven:
  • Preheat your oven to 375ยฐF (190ยฐC).
  1. Layer the Casserole:
  • In a greased baking dish, start with a layer of small flour tortillas, covering the bottom.
  1. Add Taco Seasoned Beef:
  • Spread a portion of the taco-seasoned ground beef over the tortillas.
  1. Layer with Beans and Corn:
  • Sprinkle black beans and corn over the beef layer.
  1. Drizzle Salsa:
  • Drizzle a generous amount of salsa over the beans and corn.
  1. Add Cheese:
  • Sprinkle a layer of shredded Mexican cheese blend over the salsa.
  1. Repeat Layers:
  • Repeat the layers with tortillas, taco-seasoned beef, beans, corn, salsa, and cheese until you reach the top of the baking dish, finishing with a layer of cheese on top.
  1. Bake:
  • Bake in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly, and the lasagna is heated through.
