Strawberry Cheesecake Chimichangas: A Sweet and Crispy Dessert Delight ๐Ÿ“๐Ÿฐ๐ŸŒฏ

Indulge in the heavenly combination of creamy cheesecake and luscious strawberries wrapped in a crispy tortilla with our Strawberry Cheesecake Chimichangas. This delightful dessert takes the flavors of a classic cheesecake and transforms them into a portable, handheld treat. Quick to make and irresistibly delicious, these chimichangas are a perfect sweet ending to any meal or a special treat for dessert lovers.

Ingredients:

  • 8 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, hulled and diced
  • 8 small flour tortillas
  • 1/4 cup unsalted butter, melted
  • 1/4 cup granulated sugar (for coating)
  • 1 teaspoon ground cinnamon (for coating)
  • Vanilla ice cream for serving (optional)

Instructions:

  1. Preheat Oven:
  • Preheat your oven to 375ยฐF (190ยฐC). Line a baking sheet with parchment paper.
  1. Prepare Cheesecake Filling:
  • In a mixing bowl, beat together softened cream cheese, 1/4 cup granulated sugar, and vanilla extract until smooth.
  1. Dice Strawberries:
  • Dice the fresh strawberries into small pieces.
  1. Assemble Chimichangas:
  • Spoon a generous dollop of the cheesecake filling onto the center of each tortilla. Add a spoonful of diced strawberries on top.
  1. Fold and Seal:
  • Fold the sides of the tortilla in and then roll it up, creating a chimichanga. Place each chimichanga seam-side down on the prepared baking sheet.
  1. Brush with Butter:
  • Brush each chimichanga with melted butter, ensuring they are coated evenly.
  1. Coat with Sugar and Cinnamon:
  • In a small bowl, combine 1/4 cup granulated sugar and 1 teaspoon ground cinnamon. Roll each chimichanga in the sugar-cinnamon mixture, coating them thoroughly.
  1. Bake:
  • Place the baking sheet in the preheated oven and bake for 15-20 minutes or until the chimichangas are golden brown and crispy.
  1. Cool Slightly:
  • Allow the Strawberry Cheesecake Chimichangas to cool slightly before serving.
  1. Serve with Ice Cream:
