Ingredients:

  • 1 head cauliflower, cut into bite-sized florets
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1/4 cup Kalamata olives, pitted and sliced (optional)
  • 1/4 cup feta cheese, crumbled (optional)

For the Dressing:

  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and black pepper, to taste

Instructions:

  1. Blanch Cauliflower:
  • Bring a large pot of salted water to a boil. Add the cauliflower florets and blanch for 2-3 minutes, or until just tender. Drain the cauliflower and rinse under cold water to stop the cooking process. Pat dry with paper towels and transfer to a large salad bowl.
  1. Prepare Vegetables:
  • Add the diced red and yellow bell peppers, thinly sliced red onion, halved cherry tomatoes, chopped parsley, and chopped basil to the bowl with the blanched cauliflower. If using, add the sliced Kalamata olives and crumbled feta cheese.
  1. Make Dressing:
  • In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and black pepper until well combined.
  1. Dress Salad:
  • Pour the dressing over the cauliflower and vegetable mixture in the salad bowl. Toss gently until all the ingredients are evenly coated with the dressing.
  1. Chill and Serve:
  • Cover the cauliflower salad and refrigerate for at least 30 minutes to allow the flavors to meld together.
  • Before serving, give the salad a final toss and adjust seasoning if necessary. Serve chilled and enjoy!
