Ingredients:

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar
  • 1 cup buttermilk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted

Instructions:

  1. Preheat the Oven:

  1. Prepare the Dry Ingredients:
  • In a large mixing bowl, combine the cornmeal, all-purpose flour, baking powder, baking soda, salt, and granulated sugar. Stir until well combined.

  • In a separate bowl, whisk together the buttermilk and eggs until smooth. Gradually pour in the melted butter while whisking continuously.
  1. Combine Wet and Dry Ingredients:
  • Pour the wet ingredients into the bowl of dry ingredients. Stir until just combined, being careful not to overmix. The batter should be slightly lumpy.
  1. Add Bacon and Corn:
  • Gently fold in the chopped bacon, canned corn kernels, and diced jalapeΓ±o (if using) until evenly distributed throughout the batter.
  1. Bake the Cornbread:
  • Pour the batter into the prepared baking pan or skillet, spreading it out evenly with a spatula.
