Low Carb Enchilada Meatballs Recipe

Low carb enchilada meatballs are a delicious fusion dish that combines the savory, spicy flavors of traditional Mexican enchiladas with the hearty, filling texture of meatballs. Ingredients:

  • 1 pound ground beef

  • 2 cloves garlic, minced
  • 2 tablespoons enchilada seasoning (chili powder, cumin, garlic powder, onion powder, oregano)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup red enchilada sauce
  • 1 cup shredded cheddar cheese

Instructions:

  1. Preheat Oven and Prepare Baking Sheet:
  • Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  • Line a baking sheet with parchment paper.
  1. Mix Meatball Ingredients:
  • In a large bowl, combine ground beef, ground pork (if using), almond flour, egg, chopped onion, minced garlic, enchilada seasoning, salt, and pepper.
  • Mix until all ingredients are well incorporated but avoid overmixing to keep the meatballs tender.
  1. Form Meatballs:
  • Shape the mixture into golf ball-sized meatballs and place them on the prepared baking sheet.
  1. Bake Meatballs:
  • Bake in the preheated oven for about 15-20 minutes, or until the meatballs are browned and cooked through.
  1. Add Enchilada Sauce and Cheese:
  • Pour the enchilada sauce over the cooked meatballs and sprinkle with shredded cheddar cheese.
  • Return to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  1. Serve:
  • Serve the enchilada meatballs hot, garnished with fresh cilantro, diced avocados, or sour cream for added flavor.
