Squash Patties Recipe

Squash patties are a delicious and healthy alternative to traditional fried foods, providing a burst of flavor as well as a nutritional boost. This recipe transforms a simple squash into a crispy, golden treat that can be served as a side dish, light main course, or savory snack. Ingredients:

  • 2 cups grated squash (yellow squash or zucchini)
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 egg, beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil (for frying)

Instructions:

  1. Prepare the Squash:
  • Wash the squash thoroughly. Grate it, then place the grated squash in a colander and press down with a spoon to remove excess moisture.
  1. Mix Ingredients:
  • In a large bowl, combine the grated squash, flour, Parmesan cheese, chopped onion, minced garlic, beaten egg, salt, and pepper. Stir until all the ingredients are well incorporated.
  1. Form Patties:
  • Heat the olive oil in a skillet over medium heat.
  • Scoop about a tablespoon of the squash mixture and form it into a patty. Place the patty in the hot skillet and flatten it slightly with the back of a spatula.
  1. Cook the Patties:
  • Fry the patties for about 3-4 minutes on each side or until they are golden brown and crispy.
  • Remove the patties from the skillet and drain them on paper towels to remove excess oil.
  1. Serve Warm:
  • Serve the squash patties warm with a dollop of sour cream, a sprinkle of fresh herbs, or a dipping sauce of your choice.

These squash patties are not only visually appealing, with a golden crispy exterior, but they are also extremely flavorful and satisfying.
