This dish combines the classic flavors of a cheesesteak sandwich with tender cheese-filled tortellini, all smothered in a creamy provolone sauce. Perfect for a cozy dinner, this recipe is sure to become a favorite.

๐Ÿ“‹ Ingredients:

For the Cheesesteak Filling:

  • ๐Ÿฅฉ 1 lb ribeye steak, thinly sliced
  • ๐ŸŒฟ 1 tablespoon olive oil
  • ๐Ÿง… 1 large onion, thinly sliced
  • ๐ŸŒถ 1 green bell pepper, thinly sliced
  • ๐Ÿง‚ 2 cloves garlic, minced
  • ๐Ÿง‚ 1/2 teaspoon salt
  • ๐ŸŒฟ 1/2 teaspoon black pepper

For the Tortellini:

  • ๐Ÿ 1 package (20 oz) cheese tortellini, fresh or frozen

For the Provolone Sauce:

  • ๐Ÿงˆ 4 tablespoons unsalted butter
  • ๐ŸŒพ 4 tablespoons all-purpose flour
  • ๐Ÿฅ› 2 cups whole milk
  • ๐Ÿง€ 1 cup grated provolone cheese
  • ๐Ÿง€ 1/2 cup grated Parmesan cheese
  • ๐Ÿง‚ 1/2 teaspoon salt
  • ๐ŸŒฟ 1/4 teaspoon black pepper

๐Ÿ“ Directions:

1๏ธโƒฃ Prepare the Cheesesteak Filling:

  • In a large skillet, heat the olive oil over medium-high heat.
  • Add the thinly sliced ribeye steak and cook until browned, about 4-5 minutes.
  • Remove the steak from the skillet and set aside.
  • In the same skillet, add the sliced onion and green bell pepper. Sautรฉ until tender, about 5-7 minutes.
  • Add the minced garlic and cook for an additional 1-2 minutes.
  • Return the cooked steak to the skillet, season with salt and black pepper, and mix well. Remove from heat and set aside.

2๏ธโƒฃ Cook the Tortellini:

  • Bring a large pot of salted water to a boil.
  • Add the cheese tortellini and cook according to the package instructions until al dente. Drain and set aside.

3๏ธโƒฃ Prepare the Provolone Sauce:

  • In a medium saucepan, melt the butter over medium heat.
  • Whisk in the flour and cook for 1-2 minutes, until lightly golden and bubbly.
  • Gradually whisk in the milk, stirring constantly until the mixture thickens, about 3-4 minutes.
  • Reduce the heat to low and stir in the grated provolone and Parmesan cheeses until melted and smooth.
  • Season with salt and black pepper to taste.

4๏ธโƒฃ Combine and Serve:

  • Add the cooked tortellini and cheesesteak filling to the provolone sauce. Stir gently to combine and coat everything evenly with the sauce.
  • Serve immediately, garnished with additional grated Parmesan cheese and chopped parsley if desired.
