2 lbs baby potatoes, halved or quartered
1/4 cup olive oil
1 packet (1 oz) ranch seasoning mix
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded cheddar cheese
2 tablespoons chopped fresh parsley (optional, for garnish)
Directions:
Preheat Oven:
- Preheat your oven to 400ยฐF (200ยฐC). Line a baking sheet with parchment paper or lightly grease it.
Prepare the Potatoes:
- In a large bowl, combine the halved or quartered baby potatoes, olive oil, ranch seasoning mix, garlic powder, salt, and black pepper. Toss until the potatoes are evenly coated.
