🍽️ Yellow Squash Casserole 🍽️

Enjoy this comforting and delicious Yellow Squash Casserole! It’s a perfect side dish for any meal, combining tender squash with a creamy, cheesy filling and a crispy topping.

πŸ“‹ Ingredients:

  • πŸ₯’ 4 cups sliced yellow squash (about 4 medium squash)
  • πŸ§… 1 small onion, finely chopped
  • 🧈 2 tablespoons unsalted butter
  • 🌿 1/2 teaspoon salt
  • 🌿 1/4 teaspoon black pepper
  • πŸ₯› 1 cup sour cream
  • πŸ§€ 1 cup shredded cheddar cheese
  • 🍲 1 can (10.5 oz) condensed cream of mushroom soup
  • 🍞 1 cup crushed Ritz crackers or bread crumbs
  • 🧈 2 tablespoons melted butter
  • 🌿 2 tablespoons chopped fresh parsley (optional, for garnish)

πŸ“ Directions:

1️⃣ Preheat Oven:

  • Preheat your oven to 350Β°F (175Β°C). Grease a 9Γ—13-inch baking dish.

2️⃣ Cook the Squash and Onions:

  • In a large skillet, melt 2 tablespoons of unsalted butter over medium heat. Add the sliced yellow squash and chopped onion. Cook, stirring occasionally, until the squash is tender and the onion is translucent, about 10-15 minutes.
  • Season with salt and black pepper.

3️⃣ Prepare the Filling:

  • In a large bowl, combine the cooked squash and onions, sour cream, shredded cheddar cheese, and cream of mushroom soup. Mix until well combined.

4️⃣ Assemble the Casserole:

  • Transfer the squash mixture to the prepared baking dish. Spread it out evenly.

5️⃣ Prepare the Topping:

  • In a small bowl, combine the crushed Ritz crackers (or bread crumbs) with the melted butter. Sprinkle the cracker mixture evenly over the top of the casserole.

6️⃣ Bake:

  • Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the casserole is bubbly.

7️⃣ Serve:

  • Remove from the oven and let cool for a few minutes. Garnish with chopped fresh parsley if desired.
  • Serve warm and enjoy!
