This delightful Ravioli with Tomatoes, Asparagus, Garlic, and Herbs is a perfect blend of fresh ingredients and savory flavors. It’s an easy and delicious meal that’s perfect for any night of the week.

πŸ“‹ Ingredients:

  • 🍝 1 package (20 oz) fresh or frozen cheese ravioli
  • πŸ… 2 cups cherry tomatoes, halved
  • 🌿 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • πŸ§„ 4 cloves garlic, minced
  • 🧈 2 tablespoons olive oil
  • πŸ‹ 1 tablespoon lemon juice
  • 🌿 1 teaspoon dried Italian seasoning
  • 🌿 1/2 teaspoon red pepper flakes (optional, for a bit of heat)
  • πŸ§‚ Salt and black pepper, to taste
  • 🌿 1/4 cup fresh basil leaves, chopped
  • 🌿 1/4 cup grated Parmesan cheese
  • πŸ‹ Lemon zest (optional, for garnish)

πŸ“ Directions:

1️⃣ Cook the Ravioli:

  • Bring a large pot of salted water to a boil. Add the ravioli and cook according to package instructions until al dente. Drain and set aside.

2️⃣ Prepare the Vegetables:

  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
  • Add the cherry tomatoes and asparagus to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the tomatoes start to soften and the asparagus is tender-crisp.

3️⃣ Combine and Season:

  • Add the cooked ravioli to the skillet with the vegetables. Gently toss to combine.
  • Stir in the lemon juice, dried Italian seasoning, red pepper flakes (if using), salt, and black pepper. Cook for an additional 2-3 minutes until everything is heated through.

4️⃣ Finish and Serve:

  • Remove the skillet from heat and stir in the chopped fresh basil.
  • Serve the ravioli and vegetables in bowls, garnished with grated Parmesan cheese and lemon zest if desired.
