These Strawberry French Toast Roll-Ups are a delightful and fun twist on traditional French toast. Filled with sweet strawberries and creamy filling, they make a perfect breakfast or brunch treat.

πŸ“‹ Ingredients:

  • 🍞 8 slices of white or whole wheat bread
  • πŸ“ 1 cup fresh strawberries, diced
  • πŸ§€ 4 oz cream cheese, softened
  • 🍯 2 tablespoons powdered sugar
  • πŸ₯š 2 large eggs
  • πŸ₯› 1/4 cup milk
  • πŸ₯„ 1 teaspoon vanilla extract
  • 🧈 2 tablespoons unsalted butter
  • 🍯 1/4 cup granulated sugar
  • 🌿 1 teaspoon ground cinnamon

For Serving (optional):

  • 🍯 Maple syrup
  • 🍦 Whipped cream

πŸ“ Directions:

  1. Prepare the Bread:
  • Trim the crusts off the bread slices and use a rolling pin to flatten each slice.
  1. Prepare the Filling:
  • In a small bowl, mix the softened cream cheese and powdered sugar until smooth.
  • Spread a thin layer of the cream cheese mixture onto each slice of bread.
  • Place a few diced strawberries along one edge of each slice, then roll up the bread tightly.
  1. Prepare the Egg Mixture:
  • In a shallow bowl, whisk together the eggs, milk, and vanilla extract.
  1. Coat the Roll-Ups:
  • Heat a large skillet over medium heat and melt the butter.
  • Dip each roll-up in the egg mixture, ensuring all sides are coated.
  • Place the roll-ups seam-side down in the skillet and cook until golden brown on all sides, turning as needed.
  1. Prepare the Cinnamon Sugar:
  • In a small bowl, mix the granulated sugar and ground cinnamon.
  • Roll the cooked French toast roll-ups in the cinnamon sugar mixture until evenly coated.
  1. Serve:
  • Serve the Strawberry French Toast Roll-Ups warm with maple syrup, whipped cream, and additional sliced strawberries if desired.
