🥒 Smacked Cucumber Salad 🥒

Smacked Cucumber Salad is a refreshing and flavorful Chinese appetizer that’s easy to make. The cucumbers are lightly “smacked” to create a unique texture that soaks up the delicious dressing.

📋 Ingredients:

  • 🥒 2 large cucumbers
  • 🧄 3 cloves garlic, minced
  • 🌶️ 1-2 red chili peppers, thinly sliced (optional)
  • 🌿 2 tablespoons soy sauce
  • 🍯 1 tablespoon rice vinegar
  • 🍯 1 tablespoon sesame oil
  • 🍯 1 teaspoon sugar
  • 🧂 1/4 teaspoon salt
  • 🌿 1 tablespoon toasted sesame seeds
  • 🌿 2 tablespoons chopped fresh cilantro (optional)

📝 Directions:

  1. Prepare the Cucumbers:
  • Wash the cucumbers thoroughly. Place them on a cutting board and use the flat side of a large knife or a rolling pin to gently smack the cucumbers until they split.
  • Cut the smacked cucumbers into bite-sized pieces. Transfer them to a colander, sprinkle with salt, and let them sit for about 10-15 minutes to draw out excess water.
  1. Prepare the Dressing:
  • In a small bowl, combine the minced garlic, soy sauce, rice vinegar, sesame oil, sugar, and red chili peppers (if using). Stir until the sugar is dissolved.
  1. Assemble the Salad:
  • Rinse the salted cucumbers under cold water to remove excess salt. Drain well and pat dry with a paper towel.
  • Place the cucumbers in a large bowl. Pour the dressing over the cucumbers and toss to coat evenly.
  1. Serve:
  • Transfer the smacked cucumber salad to a serving plate. Sprinkle with toasted sesame seeds and chopped fresh cilantro if desired.
  • Serve immediately or let it chill in the refrigerator for 15-20 minutes for a more intense flavor.

💡 Notes:

  • For a spicier version, you can add more chili peppers or a dash of chili oil to the dressing.

  • Adjust the amount of garlic and sugar to your taste preference.
