🥢 Egg Roll in a Bowl 🥢

This Egg Roll in a Bowl is a quick and easy dish that captures all the flavors of a traditional egg roll without the wrapper. It’s a healthy, low-carb option perfect for a weeknight dinner.

📋 Ingredients:

  • 🍖 1 pound ground pork (or ground chicken, turkey, or beef)
  • 🧅 1 medium onion, chopped
  • 🧄 3 cloves garlic, minced
  • 🌿 1 tablespoon fresh ginger, minced
  • 🥕 1 cup shredded carrots
  • 🥬 4 cups shredded cabbage or coleslaw mix
  • 🌿 1/4 cup soy sauce (or tamari for gluten-free)
  • 🍶 2 tablespoons hoisin sauce (optional)
  • 🍋 1 tablespoon rice vinegar
  • 🌶️ 1 teaspoon sesame oil
  • 🥄 1 teaspoon sriracha or hot sauce (optional, for heat)
  • 🌿 2 green onions, sliced (for garnish)
  • 🌿 1 tablespoon sesame seeds (for garnish)

📝 Directions:

Cook the Meat:

  1. Brown Ground Meat:
    In a large skillet or wok, cook the ground pork over medium-high heat until browned, breaking it up into crumbles as it cooks. Drain any excess fat.
  2. Add Aromatics:
    Add the chopped onion, minced garlic, and minced ginger to the skillet. Cook for 2-3 minutes, until the onion is translucent and fragrant.

Add Vegetables:

  1. Add Carrots and Cabbage:
    Stir in the shredded carrots and cabbage (or coleslaw mix). Cook for 5-7 minutes, stirring frequently, until the vegetables are tender.

Season:

  1. Add Sauces and Seasonings:
    Pour in the soy sauce, hoisin sauce (if using), rice vinegar, sesame oil, and sriracha (if using). Stir well to combine and cook for an additional 2-3 minutes to allow the flavors to meld.

Serve:

  1. Garnish:
    Remove from heat and garnish with sliced green onions and sesame seeds.
  2. Enjoy:
    Serve the Egg Roll in a Bowl hot as is, or over rice or cauliflower rice for a more filling meal.
