Transform your leftover mashed potatoes into these crispy, golden Potato Cakes. They’re perfect as a side dish or a delicious snack.

  • πŸ₯” 2 cups leftover mashed potatoes
  • πŸ₯š 1 large egg
  • πŸ§€ 1/2 cup shredded cheddar cheese
  • 🌿 2 tablespoons chopped fresh chives or green onions
  • πŸ₯„ 1/4 cup all-purpose flour
  • πŸ§‚ 1/2 teaspoon salt
  • 🌢️ 1/4 teaspoon black pepper
  • 🌽 Vegetable oil, for frying

Prepare the Mixture:

  1. In a large mixing bowl, combine the leftover mashed potatoes, egg, shredded cheddar cheese, chopped chives or green onions, flour, salt, and black pepper. Mix until well combined.

Form the Cakes:

  1. Divide the mixture into equal portions and shape them into patties, about 1/2 inch thick.

Fry the Potato Cakes:

  1. Heat a generous amount of vegetable oil in a large skillet over medium-high heat.
