This hearty and delicious slow cooker chili is perfect for busy days when you want a comforting meal without spending hours in the kitchen. Just toss everything into the slow cooker and let it do the work for you!

πŸ“‹ Ingredients:

πŸ₯© 1 lb (450g) ground beef or turkey
πŸ§… 1 large onion, chopped
🌢 1 bell pepper, chopped
πŸ§„ 3 cloves garlic, minced
πŸ₯« 1 can (15 oz/425g) kidney beans, drained and rinsed
πŸ₯« 1 can (15 oz/425g) black beans, drained and rinsed
πŸ… 1 can (15 oz/425g) diced tomatoes
πŸ… 1 can (15 oz/425g) tomato sauce
πŸ… 1 can (6 oz/170g) tomato paste
πŸ’§ 2 cups (475ml) beef broth or water
🌢 2 tbsp chili powder
🌿 1 tsp cumin
🌿 1 tsp paprika
🌿 1 tsp oregano
🌢 1/2 tsp cayenne pepper (optional, for extra heat)
πŸ§‚ Salt and pepper to taste
🌽 1 cup (240ml) frozen corn (optional)
πŸ§€ Shredded cheese, sour cream, and chopped green onions for garnish

πŸ“ Instructions:

  1. Prepare Ingredients:

In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain any excess fat.

  1. Add Vegetables:

Add the chopped onion, garlic, and bell pepper to the skillet. Cook for 5 minutes until softened.

  1. Combine in Slow Cooker:

Transfer the cooked meat and vegetables to your slow cooker. Add the kidney beans, black beans, diced tomatoes, tomato sauce, and tomato paste.

  1. Season:

Pour in the beef broth or water. Add the chili powder, cumin, paprika, oregano, cayenne pepper (if using), salt, and pepper. Stir well to combine.

  1. Cook:

Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.

  1. Optional Addition:

If using, add the frozen corn during the last 30 minutes of cooking.

  1. Serve:

Once cooked, give the chili a good stir. Serve hot, topped with shredded cheese, sour cream, and chopped green onions.
