This refreshing and vibrant seafood salad is perfect for a light lunch or a summer dinner. Itโ€™s packed with a variety of seafood, fresh vegetables, and a zesty dressing that ties everything together beautifully.

๐Ÿ“‹ Ingredients:

For the Salad:

  • ๐Ÿฆ 1 pound cooked shrimp, peeled and deveined
  • ๐Ÿ™ 1/2 pound cooked octopus or calamari, sliced
  • ๐Ÿฆ€ 1/2 pound cooked crab meat or imitation crab meat, flaked
  • ๐Ÿฅ‘ 1 avocado, diced
  • ๐Ÿฅ’ 1 cucumber, diced
  • ๐Ÿ… 1 cup cherry tomatoes, halved
  • ๐Ÿฅ— 1 cup mixed greens or arugula
  • ๐Ÿง… 1/2 red onion, thinly sliced
  • ๐ŸŒถ๏ธ 1 red bell pepper, diced
  • ๐Ÿ‹ 2 tablespoons capers, drained
  • ๐ŸŒฟ 2 tablespoons fresh parsley, chopped

For the Dressing:

  • ๐Ÿ‹ 1/4 cup fresh lemon juice
  • ๐Ÿฅ„ 2 tablespoons olive oil
  • ๐Ÿฅ„ 1 tablespoon Dijon mustard
  • ๐Ÿง„ 2 cloves garlic, minced
  • ๐Ÿง‚ Salt and pepper to taste
  • ๐ŸŒฟ 1 teaspoon dried oregano

  1. Prepare the Seafood:
