These Pumpkin Cookies with Brown Butter Icing are soft, spiced, and absolutely delicious. The nutty brown butter icing adds a rich flavor that perfectly complements the pumpkin cookies, making them a must-try for any fall gathering.

For the Cookies:

  • ๐ŸŽƒ 1 cup unsalted butter, softened
  • ๐Ÿฌ 1 cup granulated sugar
  • ๐Ÿฌ 1/2 cup brown sugar, packed
  • ๐Ÿฅš 1 large egg
  • ๐Ÿฆ 1 teaspoon vanilla extract
  • ๐ŸŽƒ 1 cup canned pumpkin puree
  • ๐ŸŒพ 2 1/2 cups all-purpose flour
  • ๐ŸŒฟ 1 teaspoon baking powder
  • ๐ŸŒฟ 1 teaspoon baking soda
  • ๐ŸŒฟ 1 teaspoon ground cinnamon
  • ๐ŸŒฟ 1/2 teaspoon ground nutmeg
  • ๐Ÿง‚ 1/2 teaspoon salt

For the Brown Butter Icing:

  • ๐Ÿงˆ 1/2 cup unsalted butter
  • ๐Ÿš 2 cups powdered sugar
  • ๐Ÿฅ› 2-3 tablespoons milk
  • ๐Ÿฆ 1 teaspoon vanilla extract

๐Ÿ“ Directions:

Prepare the Cookies:

  1. Preheat Oven: Preheat your oven to 350ยฐF (175ยฐC). Line a baking sheet with parchment paper.
  2. Cream Butter and Sugars: In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add Wet Ingredients: Beat in the egg, vanilla extract, and pumpkin puree until well combined.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
