These White Chocolate Blueberry Cheesecake Cupcakes are a delightful treat that combines the rich flavors of white chocolate and blueberries with the creamy texture of cheesecake. Perfect for any occasion, these cupcakes are sure to impress your guests!

📋 Ingredients:

For the Crust:

  • 🍪 1 cup graham cracker crumbs
  • 🍬 2 tbsp granulated sugar
  • 🧈 4 tbsp unsalted butter, melted

For the Cheesecake Filling:

  • 🍫 8 oz white chocolate, melted and slightly cooled
  • 🧀 16 oz cream cheese, softened
  • 🍬 1/2 cup granulated sugar
  • 🥚 2 large eggs
  • 🍋 1 tsp vanilla extract
  • 🥛 1/4 cup sour cream
  • 🫐 1 cup fresh blueberries

📝 Directions:

  1. Preheat Oven: Preheat your oven to 325°F (165°C). Line a muffin tin with cupcake liners.
  2. Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly moistened. Press about 1 tablespoon of the mixture into the bottom of each cupcake liner. Bake the crusts in the preheated oven for 5 minutes, then remove and let cool.
  3. Prepare the Filling: In a large bowl, beat the softened cream cheese and granulated sugar until smooth and creamy. Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract and sour cream until well combined. Fold in the melted white chocolate until the mixture is smooth. Gently fold in the fresh blueberries.
  4. Fill the Cups: Spoon the cheesecake filling over the cooled crusts, filling each cupcake liner almost to the top.
  5. Bake: Bake in the preheated oven for 20-25 minutes, or until the centers are set. Allow the cupcakes to cool in the muffin tin for about 10 minutes, then transfer to a wire rack to cool completely. Refrigerate for at least 2 hours before serving.
  6. Serve: Top each cupcake with a few fresh blueberries or a drizzle of melted white chocolate if desired.
