Blueberry Fritter Bites are a sweet and fruity treat thatβs perfect for breakfast, brunch, or a quick snack. These bite-sized fritters are packed with juicy blueberries and coated in a sweet glaze that will have you reaching for more!
Ingredients:
For the Fritter Bites:
1/2 cup milk
1 large egg
2 tbsp unsalted butter, melted
1/4 cup granulated sugar
1 1/2 cups all-purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
1 cup fresh or frozen blueberries
Vegetable oil, for frying
For the Glaze:
1 cup powdered sugar
2-3 tbsp milk
1/2 tsp vanilla extract (optional)
Directions:
- Prepare the Batter:
In a large mixing bowl, whisk together the milk, egg, melted butter, and granulated sugar until well combined. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Gently fold in the blueberries.
- Heat the Oil:
In a large skillet or deep fryer, heat about 2 inches of vegetable oil over medium heat until it reaches 350Β°F (175Β°C).
- Fry the Fritter Bites:
Drop spoonfuls of batter (about 1 tablespoon each) into the hot oil, being careful not to overcrowd the pan. Fry the fritter bites in batches, turning occasionally, until they are golden brown and cooked through, about 2-3 minutes per side. Use a slotted spoon to transfer the fritters to a paper towel-lined plate to drain.
- Make the Glaze:
In a small bowl, whisk together the powdered sugar, milk, and vanilla extract (if using) until smooth and pourable. If the glaze is too thick, add a bit more milk until you reach the desired consistency.
- Glaze the Fritters:
Once the fritters have cooled slightly, dip them into the glaze, allowing any excess to drip off. Place the glazed fritters on a wire rack to set.
