Homemade Chicken Taquitos are crispy, flavorful, and filled with tender shredded chicken and a blend of spices. These taquitos are perfect as a snack, appetizer, or even a main dish, and theyโ€™re easy to make right at home!

๐Ÿ“‹ Ingredients:

  • ๐Ÿ— 2 cups cooked shredded chicken (rotisserie chicken works great)
  • ๐Ÿง€ 1 cup shredded cheddar cheese or Monterey Jack cheese
  • ๐Ÿง… 1/2 cup salsa or diced tomatoes
  • ๐ŸŒถ๏ธ 1 tsp ground cumin
  • ๐ŸŒถ๏ธ 1 tsp chili powder
  • ๐Ÿง‚ 1/2 tsp garlic powder
  • ๐Ÿง‚ 1/2 tsp onion powder
  • ๐ŸŒฎ 12 small corn tortillas
  • ๐Ÿ›ข๏ธ Oil for frying (vegetable or canola oil works well)
  • ๐ŸŒฟ Fresh cilantro, for garnish (optional)

๐Ÿ“ Directions:

1. Prepare the Chicken Filling:

  • ๐Ÿ— Mix the Filling: In a large mixing bowl, combine the shredded chicken, shredded cheese, salsa, cumin, chili powder, garlic powder, and onion powder. Stir until well mixed.

2. Warm the Tortillas:

  • ๐ŸŒฎ Warm the Tortillas: To make the tortillas more pliable and prevent cracking, warm them in a dry skillet over medium heat for about 15-20 seconds on each side, or wrap them in a damp paper towel and microwave for 30 seconds.

3. Assemble the Taquitos:

  • ๐ŸŒฎ Fill and Roll: Place about 2 tablespoons of the chicken mixture onto the lower third of each tortilla. Roll the tortilla tightly around the filling, securing it with a toothpick if necessary to prevent unrolling.

4. Fry the Taquitos:

  • ๐Ÿ›ข๏ธ Heat the Oil: In a large skillet, heat about 1/2 inch of oil over medium heat until it reaches 350ยฐF (175ยฐC).
  • ๐Ÿณ Fry the Taquitos: Carefully place the taquitos seam side down into the hot oil. Fry for 2-3 minutes per side, or until they are golden brown and crispy. Remove from the oil and drain on paper towels.

5. Serve:

  • ๐ŸŒฟ Garnish and Serve: Remove the toothpicks if used. Serve the taquitos hot, garnished with fresh cilantro if desired. They pair perfectly with sour cream, guacamole, or salsa for dipping.
