September 13, 2024 by BMA24

This Golden Seared Cod with Herb Butter Sauce is a light, flavorful dish that’s easy to prepare. The cod is seared to a golden crisp and served with a rich, garlicky herb butter sauce, making it the perfect combination of tender fish and bold flavors.

πŸ“‹ Ingredients:

For the Cod:

  • 4 cod fillets (about 6 oz each) 🐟
  • Salt and pepper to taste πŸ§‚πŸŒΆοΈ
  • 1/2 cup all-purpose flour (for dredging) 🌾
  • 2 tablespoons olive oil πŸ«’
  • 2 tablespoons unsalted butter 🧈

For the Herb Butter Sauce:

  • 4 tablespoons unsalted butter 🧈
  • 2 cloves garlic, minced πŸ§„
  • 1 tablespoon fresh lemon juice πŸ‹
  • 2 tablespoons fresh parsley, chopped 🌿
  • 1 tablespoon fresh dill, chopped (optional) 🌿
  • Salt and pepper to taste πŸ§‚πŸŒΆοΈ
  • Lemon wedges, for serving πŸ‹

πŸ“ Instructions:

1. Prepare the Cod:

  1. Season the fish:
  • Pat the cod fillets dry with a paper towel and season both sides with salt and pepper.
  1. Dredge in flour:
  • Lightly dredge the fillets in all-purpose flour, shaking off the excess. This will help create a crispy golden crust.

2. Sear the Cod:

  1. Heat the skillet:
  • Heat the olive oil and 2 tablespoons of butter in a large skillet over medium-high heat.
  1. Cook the cod:
  • Once the oil is hot, carefully place the cod fillets in the skillet. Cook for 3-4 minutes per side, or until the fillets are golden brown and cooked through (the internal temperature should reach 145Β°F or 63Β°C).
  1. Remove and rest:
  • Remove the cod from the skillet and transfer to a plate. Cover with foil to keep warm while you make the sauce.

3. Make the Herb Butter Sauce:

  1. SautΓ© the garlic:
  • In the same skillet, reduce the heat to medium and add the remaining 4 tablespoons of butter. Once melted, add the minced garlic and cook for about 1 minute, until fragrant but not browned.
  1. Add lemon and herbs:
  • Stir in the lemon juice, fresh parsley, and dill (if using). Season with salt and pepper to taste. Let the sauce simmer for 1-2 minutes.

4. Serve:

  1. Drizzle the sauce:
  • Plate the seared cod fillets and generously drizzle the herb butter sauce over the top.
  1. Garnish and enjoy:
  • Serve with lemon wedges on the side and garnish with extra herbs if desired. Pair with steamed vegetables, rice, or a light salad for a complete meal.
