These Old Bay Shrimp Burritos are packed with seasoned shrimp, fresh veggies, rice, and a zesty sauce. The bold flavors of Old Bay seasoning elevate this burrito to a new level of deliciousness, making it a perfect, quick, and satisfying meal!

πŸ“‹ Ingredients:

For the Shrimp:

  • 1 lb shrimp, peeled and deveined 🦐
  • 1 tablespoon Old Bay seasoning 🌿
  • 1 tablespoon olive oil πŸ›’οΈ
  • 1 clove garlic, minced πŸ§„
  • 1 tablespoon lime juice πŸ‹

For the Burritos:

  • 4 large flour tortillas 🌯
  • 2 cups cooked white or brown rice 🍚
  • 1 cup black beans, rinsed and drained 🌱
  • 1/2 cup shredded cheddar or Monterey Jack cheese πŸ§€
  • 1 avocado, sliced πŸ₯‘
  • 1/2 cup sour cream πŸ₯›
  • 1/2 cup salsa or pico de gallo πŸ…
  • 1/4 cup fresh cilantro, chopped 🌿
  • 1/4 cup chopped lettuce (optional) πŸ₯¬

1. Cook the Shrimp:

  1. Season and cook the shrimp:
  • In a bowl, toss the shrimp with Old Bay seasoning, minced garlic, and lime juice.
  • Heat olive oil in a skillet over medium heat. Add the shrimp and cook for 2-3 minutes per side, until the shrimp are pink and cooked through. Remove from heat and set aside.

2. Prepare the Burrito Fillings:

  1. Heat the tortillas:
  • Warm the tortillas in a dry skillet for about 30 seconds on each side, or until soft and pliable.

  • In the center of each tortilla, layer rice, black beans, shredded cheese, avocado slices, sour cream, salsa or pico de gallo, and cilantro.

3. Assemble the Burritos:

  1. Add the shrimp:
  • Divide the cooked shrimp evenly among the tortillas, placing them on top of the other fillings.
  1. Fold the burritos:
  • Fold in the sides of the tortilla, then roll it up tightly from the bottom to the top, securing all the fillings inside.

  • Slice the burritos in half and serve with extra salsa, sour cream, or guacamole on the side if desired.
