This Cheesy Garlic Bread Shrimp Grilled Cheese is a delightful twist on classic grilled cheese. Combining garlic butter, shrimp, and ooey-gooey cheese between golden, crispy bread makes this a mouthwatering and indulgent sandwich!

๐Ÿ“‹ Ingredients:

For the Garlic Butter:

  • 1/4 cup unsalted butter, softened ๐Ÿงˆ
  • 2 cloves garlic, minced ๐Ÿง„
  • 1 tablespoon fresh parsley, chopped ๐ŸŒฟ
  • 1/4 teaspoon garlic powder (optional) ๐ŸŒฐ
  • Pinch of salt ๐Ÿง‚

For the Sandwich:

  • 8 slices of bread (sourdough or Italian bread works great) ๐Ÿž
  • 1 cup cooked shrimp, chopped (small shrimp or medium-sized shrimp, peeled and deveined) ๐Ÿฆ
  • 2 cups shredded mozzarella or cheddar cheese ๐Ÿง€
  • 1 tablespoon olive oil ๐Ÿ›ข๏ธ
  • 1/4 teaspoon red pepper flakes (optional for heat) ๐ŸŒถ๏ธ

๐Ÿ“ Instructions:

1. Make the Garlic Butter:

  1. Mix the garlic butter:
  • In a small bowl, combine the softened butter, minced garlic, parsley, garlic powder (if using), and a pinch of salt. Mix well until all ingredients are combined.

2. Prepare the Shrimp:

  1. Cook the shrimp:
  • Heat olive oil in a skillet over medium heat. Add the chopped shrimp and cook for 2-3 minutes until pink and cooked through. Season with a pinch of salt, red pepper flakes (if using), and set aside.

3. Assemble the Sandwiches:

  1. Butter the bread:
  • Spread a generous amount of the garlic butter on one side of each slice of bread.
  1. Add the cheese and shrimp:
  • On the non-buttered side of 4 slices of bread, layer 1/2 cup of shredded cheese. Top with the cooked shrimp, distributing it evenly. Add another 1/2 cup of shredded cheese on top of the shrimp.
  1. Close the sandwiches:
  • Place the remaining slices of bread on top of each sandwich, buttered side facing up.

4. Grill the Sandwiches:

  1. Grill the sandwiches:
  • Heat a large skillet or griddle over medium heat. Grill each sandwich for about 3-4 minutes per side, pressing down slightly with a spatula, until the bread is golden brown and crispy, and the cheese is melted.

  • Remove from the skillet and allow the sandwiches to cool for a minute before slicing in half. Serve warm and enjoy!
