🥒 Pan-Fried Zucchini Rounds Recipe 🥒

These Pan-Fried Zucchini Rounds are crispy on the outside and tender on the inside, making them a delicious and simple side dish or snack. They’re quick to prepare and can be served with your favorite dipping sauce!

📋 Ingredients:

  • 2 medium zucchini, sliced into 1/4-inch thick rounds 🥒
  • 1/2 cup all-purpose flour 🌾
  • 2 large eggs, beaten 🥚
  • 1 cup breadcrumbs (Panko for extra crunch) 🍞
  • 1/2 cup grated Parmesan cheese 🧀
  • 1 teaspoon garlic powder 🌰
  • 1/2 teaspoon salt 🧂
  • 1/4 teaspoon black pepper 🌶️
  • 2-3 tablespoons vegetable oil for frying 🛢️
  • Optional: Fresh parsley for garnish 🌿

📝 Instructions:

1. Prepare the Ingredients:

  1. Slice the zucchini:
  • Slice the zucchini into 1/4-inch thick rounds and set aside.
  1. Prepare the breading stations:
  • In three separate shallow bowls, place the flour in one, the beaten eggs in another, and mix the breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper in the third.

2. Bread the Zucchini:

  1. Coat the zucchini:
  • Dredge each zucchini round first in the flour, shaking off the excess. Then dip it in the beaten eggs, and finally coat it in the breadcrumb mixture, pressing gently to adhere the breadcrumbs.

3. Pan-Fry the Zucchini:

  1. Heat the oil:
  • In a large skillet, heat 2-3 tablespoons of vegetable oil over medium heat until shimmering.
  1. Fry the zucchini:
  • Add the breaded zucchini rounds to the hot oil in a single layer (you may need to work in batches). Fry for 2-3 minutes on each side, or until golden brown and crispy.
  1. Drain:
  • Remove the zucchini from the skillet and place them on a paper towel-lined plate to drain excess oil.

4. Serve:

  1. Garnish and serve:
  • Garnish the zucchini rounds with fresh parsley if desired, and serve warm with your favorite dipping sauce (such as marinara, ranch, or aioli).
