September 20, 2024 by BMA24

This Peach Upside Down Cake is a deliciously moist and flavorful dessert featuring caramelized peaches on top of a tender vanilla cake. It’s perfect for a summer treat or any time you crave the fresh, sweet flavor of peaches!

πŸ“‹ Ingredients:

For the Topping:

  • 1/4 cup unsalted butter 🧈
  • 1/2 cup brown sugar 🍬
  • 3-4 fresh peaches, peeled, pitted, and sliced πŸ‘

For the Cake:

  • 1 1/2 cups all-purpose flour 🌾
  • 1 1/2 teaspoons baking powder 🌿
  • 1/4 teaspoon salt πŸ§‚
  • 1/2 cup unsalted butter, softened 🧈
  • 3/4 cup granulated sugar 🍬
  • 2 large eggs πŸ₯š
  • 1 teaspoon vanilla extract 🌿
  • 1/2 cup whole milk πŸ₯›

πŸ“ Instructions:

1. Preheat the Oven:

  1. Preheat your oven:
  • Preheat the oven to 350Β°F (175Β°C). Grease a 9-inch round cake pan.

2. Prepare the Topping:

  1. Make the caramel topping:
  • In a small saucepan, melt the butter over medium heat. Stir in the brown sugar and cook until it dissolves and becomes slightly bubbly, about 2-3 minutes.
  1. Arrange the peaches:
  • Pour the caramel sauce into the bottom of the greased cake pan. Arrange the sliced peaches over the caramel in a circular pattern, slightly overlapping them.

3. Make the Cake Batter:

  1. Mix dry ingredients:
  • In a medium bowl, whisk together the flour, baking powder, and salt.
  1. Cream the butter and sugar:
  • In a large bowl, cream the softened butter and granulated sugar together using an electric mixer until light and fluffy, about 2-3 minutes.
  1. Add eggs and vanilla:
  • Beat in the eggs, one at a time, then mix in the vanilla extract.
  1. Add the dry ingredients and milk:
  • Gradually add the dry ingredients to the butter mixture, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined.

4. Assemble and Bake:

  1. Pour the batter:
  • Gently pour the cake batter over the arranged peaches, spreading it evenly with a spatula.
  1. Bake:
  • Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.

5. Serve:

  1. Cool and invert:
  • Let the cake cool in the pan for about 10 minutes. Run a knife around the edges of the cake, then carefully invert it onto a serving plate. Tap the bottom of the pan gently to release the cake.
  1. Serve and enjoy:
  • Serve warm or at room temperature. Top with whipped cream or vanilla ice cream for an extra treat!
