🌢️ Caldillo de Chile Verde Recipe 🍲

Caldillo de Chile Verde is a traditional Mexican stew made with tender meat, potatoes, and roasted green chiles. This comforting dish is flavorful, hearty, and perfect for a cozy meal. It’s usually made with pork or beef, but you can customize it to your liking!

  • 1 1/2 lbs pork shoulder or beef (cubed) πŸ–
  • 1 tablespoon vegetable oil πŸ›’οΈ
  • 6-8 roasted green chiles (Anaheim, Hatch, or poblano), peeled and chopped 🌢️

  • 4 cups chicken or beef broth 🍲

πŸ“ Instructions:

1. Brown the Meat:

  1. Heat the oil:
  • In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.

  • Add the cubed pork or beef to the pot and season with salt and pepper. Brown the meat on all sides, about 5-7 minutes. Remove the meat from the pot and set aside.

2. Cook the Vegetables:

  • In the same pot, add the chopped onion and minced garlic. SautΓ© until the onion is softened and translucent, about 3-4 minutes.
  1. Add the green chiles:
  • Stir in the roasted and chopped green chiles and cook for another 2 minutes.

3. Add the Meat and Broth:

  1. Return the meat:
  • Return the browned meat to the pot with the onion and chile mixture.
  1. Add broth and spices:
  • Pour in the chicken or beef broth, cumin, and oregano. Stir to combine.
  1. Simmer:
  • Bring the mixture to a simmer, cover the pot, and let it cook for about 45 minutes to 1 hour, or until the meat is tender.

4. Add the Potatoes:

  1. Add the potatoes:
  • Stir in the diced potatoes and continue simmering for another 20-25 minutes, or until the potatoes are soft and fully cooked.

5. Adjust Seasoning and Serve:

  1. Check seasoning:
  • Taste the caldillo and adjust the seasoning with more salt and pepper if needed.
  1. Serve:
  • Ladle the Caldillo de Chile Verde into bowls and garnish with fresh cilantro. Serve with lime wedges on the side for a squeeze of freshness.
