For the Chicken:

  • 2 boneless, skinless chicken breasts ๐Ÿ—
  • 1 tablespoon olive oil ๐Ÿ›ข๏ธ
  • 1 teaspoon freshly ground black pepper ๐ŸŒถ๏ธ
  • 1/2 teaspoon salt ๐Ÿง‚
  • 1 teaspoon soy sauce ๐ŸŒฟ

For the Salad:

  • 4 cups mixed salad greens ๐Ÿฅฌ
  • 1 cup cucumber, sliced ๐Ÿฅ’
  • 1 cup cherry tomatoes, halved ๐Ÿ…
  • 1/2 cup shredded carrots ๐Ÿฅ•
  • 1/2 cup red bell pepper, thinly sliced ๐ŸŒถ๏ธ
  • 2 green onions, chopped ๐ŸŒฟ
  • 1 tablespoon sesame seeds (optional) ๐ŸŒพ

For the Sesame Dressing:

  • 2 tablespoons toasted sesame oil ๐Ÿ›ข๏ธ
  • 1 tablespoon soy sauce ๐ŸŒฟ
  • 1 tablespoon rice vinegar ๐Ÿถ
  • 1 tablespoon honey or maple syrup ๐Ÿฏ
  • 1 teaspoon Dijon mustard ๐ŸŒฟ
  • 1 teaspoon fresh ginger, grated ๐Ÿง„
  • 1 clove garlic, minced ๐Ÿง„
  • 1 tablespoon water (to thin, if needed)

1. Prepare the Chicken:

  1. Season and cook the chicken:
  • Season the chicken breasts with salt, black pepper, and soy sauce. Heat olive oil in a skillet over medium-high heat.
