  • 🌿 1 tsp dried rosemary (optional)
  • 🍳 2 tbsp olive oil
  • 🥕 1 cup beef broth
  • 🌿 2-3 sprigs fresh thyme (optional, for garnish)

🍴 Instructions

1️⃣ Preheat the Oven:

  • Preheat your oven to 300°F (150°C).

2️⃣ Season the Meat:

  • In a small bowl, mix the salt, pepper, garlic powder, onion powder, and dried rosemary. Rub this seasoning mix all over the chuck roast.

3️⃣ Sear the Roast:

  • Heat olive oil in a large oven-safe skillet or cast-iron pan over medium-high heat. Sear the roast on all sides until a golden-brown crust forms, about 2-3 minutes per side.

4️⃣ Deglaze the Pan:

  • Remove the roast and set it aside. Pour beef broth into the skillet and scrape up any browned bits from the bottom—this adds incredible flavor.

5️⃣ Roast the Beef:

  • Place the chuck roast back into the skillet. Cover tightly with aluminum foil or a lid and roast in the oven for about 1 hour 15 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.

6️⃣ Rest the Roast:

  • Remove the roast from the oven and let it rest, covered, for 10-15 minutes. This allows the juices to redistribute for maximum tenderness.

7️⃣ Slice & Serve:

  • Slice the roast thinly, garnish with fresh thyme, and serve with pan juices or your favorite sides like mashed potatoes, roasted veggies, or a crisp salad.
