For the Filling:

  • 🍎 2 cups diced apples (peeled and cored; Granny Smith or Honeycrisp work well)
  • 🍬 1/3 cup granulated sugar

  • 🧈 1 tbsp unsalted butter
  • πŸ₯„ 1 tsp lemon juice
  • 🌽 1 tsp cornstarch (mixed with 1 tbsp water to thicken)

For the Dough:

  • 🍞 2 1/2 cups all-purpose flour
  • πŸ§‚ 1/2 tsp salt
  • 🧈 1/2 cup unsalted butter, cubed and chilled
  • πŸ₯› 1/2 cup cold milk (plus a little more if needed)

For Frying:

1️⃣ Make the Apple Filling:

  • In a medium saucepan over medium heat, combine the diced apples, sugar, cinnamon, butter, and lemon juice. Cook for 5-7 minutes, stirring occasionally, until the apples are tender.
  • Add the cornstarch slurry (cornstarch + water) and stir until the filling thickens. Remove from heat and let it cool completely.

2️⃣ Prepare the Dough:

  • In a large bowl, whisk together the flour and salt. Add the chilled butter and cut it into the flour using a pastry cutter or fork until the mixture resembles coarse crumbs.
  • Gradually add the cold milk and mix until the dough comes together. If needed, add a bit more milk, 1 tablespoon at a time.
  • Wrap the dough in plastic wrap and chill for 30 minutes.

3️⃣ Assemble the Pies:

  • Roll out the dough on a lightly floured surface to about 1/8-inch thickness.
  • Cut out circles using a round cutter (about 6 inches in diameter).
  • Place about 2 tablespoons of the cooled apple filling onto one side of each dough circle. Fold the dough over the filling to create a half-moon shape.
  • Press the edges with a fork to seal.

4️⃣ Fry the Pies:

  • In a large skillet or Dutch oven, heat about 2 inches of vegetable oil to 350Β°F (175Β°C).
  • Fry the pies in batches for 2-3 minutes per side, or until golden brown.
  • Use a slotted spoon to transfer the pies to a paper towel-lined plate to drain.
