1/4 cup unsalted butter, melted
For the Crust:
2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
1/4 cup granulated sugar
For the Cheesecake Filling:
3 (8 oz) packages cream cheese, softened
1 cup granulated sugar
1 tsp vanilla extract
3 large eggs
1/2 cup sour cream
1/4 cup heavy cream
Instructions:
Preheat the Oven:
- Preheat your oven to 325Β°F (163Β°C). Grease a 9-inch springform pan and wrap the outside with aluminum foil to prevent leaks.
Prepare the Topping:
- Pour the melted butter into the bottom of the springform pan. Sprinkle the brown sugar evenly over the butter.
- Arrange the pineapple slices in a single layer over the sugar mixture. Place a cherry in the center of each pineapple slice.
Make the Crust:
- In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture firmly over the pineapple slices to create an even crust. Set aside.
Make the Cheesecake Filling:
- In a large mixing bowl, beat the cream cheese and sugar until smooth.
- Add the eggs, one at a time, beating well after each addition.
- Mix in the vanilla extract, sour cream, and heavy cream until smooth and creamy.
Assemble and Bake:
- Pour the cheesecake filling over the crust. Smooth the top with a spatula.
- Place the springform pan in a larger roasting pan and fill the roasting pan with hot water until it reaches halfway up the sides of the springform pan.
Bake the Cheesecake:
- Bake for 70-80 minutes, or until the center is just set and slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.
Chill and Serve:
- Remove the cheesecake from the water bath and refrigerate for at least 4 hours or overnight.
- Carefully invert the cheesecake onto a serving plate so the pineapple topping is on top. Slice and serve chilled.
