These Cherry Pie Bars have a buttery, flaky crust, a sweet cherry filling, and are perfectly golden and crispβ€”just like classic cherry pie but easier to make!


πŸ›’ Ingredients:

For the Crust & Topping:

  • 🧈 1 cup (2 sticks) unsalted butter, softened
  • 🍚 1 Β½ cups granulated sugar
  • πŸ₯š 2 large eggs
  • πŸ₯„ 1 tsp vanilla extract
  • 🍞 3 cups all-purpose flour
  • πŸ₯„ 1 tsp baking powder
  • πŸ§‚ Β½ tsp salt

For the Filling:

  • πŸ’ 1 (21 oz) can cherry pie filling (or homemade)
  • πŸ₯„ Β½ tsp almond extract (optional but adds amazing flavor!)

πŸ”₯ Instructions:

1️⃣ Prepare the Crust

  1. Preheat oven to 350Β°F (175Β°C) and grease a 9Γ—13-inch baking dish.
  2. In a bowl, beat butter and sugar until creamy.
  3. Add eggs and vanilla, mixing until combined.
  4. In a separate bowl, whisk flour, baking powder, and salt.
  5. Gradually mix the dry ingredients into the butter mixture until a soft dough forms.

2️⃣ Assemble the Bars

  1. Spread β…” of the dough evenly into the prepared pan.
  2. Mix the cherry pie filling with almond extract, then spread it over the crust.
  3. Drop small spoonfuls of the remaining dough over the cherries.

3️⃣ Bake & Cool

  • Bake for 35-40 minutes, until the top is golden brown.
  • Let cool completely before slicing into bars.

4️⃣ Serve & Enjoy

  • Dust with powdered sugar or drizzle with icing for an extra touch!
