🌮 Loaded Taco Beef Casserole: A Cheesy, Flavor-Packed Delight!

This Loaded Taco Beef Casserole is the ultimate comfort food, bringing all the best flavors of a taco into one bubbly, cheesy, and hearty dish! Perfect for weeknight dinners or potlucks, this easy-to-make recipe is sure to become a family favorite.

🛒 Ingredients:

  • 🥩 Ground beef – 500g
  • 🌮 Taco seasoning – 2 tbsp
  • 🌶️ Bell peppers – 1 cup, diced
  • 🧅 Onion – 1 small, diced
  • 🧄 Garlic – 2 cloves, minced
  • 🥫 Diced tomatoes – 1 can (400g)
  • 🌽 Corn kernels – 1 cup (fresh, canned, or frozen)
  • 🫘 Black beans – 1 can (400g), drained & rinsed
  • 🧀 Shredded cheese – 2 cups (cheddar or Mexican blend)
  • 🌮 Tortilla chips – 2 cups, crushed
  • 🍶 Sour cream – for topping
  • 🌿 Fresh cilantro – for garnish

👩‍🍳 Instructions:

1️⃣ Preheat & Prepare: Preheat your oven to 180°C (350°F). Lightly grease a baking dish.

2️⃣ Cook the Beef: In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.

3️⃣ Sauté the Veggies: Add onions, bell peppers, and garlic to the skillet. Cook until softened, about 5 minutes.

4️⃣ Season & Simmer: Stir in the taco seasoning, diced tomatoes, corn, and black beans. Simmer for 5-7 minutes.

5️⃣ Assemble the Casserole: Layer half of the crushed tortilla chips in the baking dish. Pour the beef mixture over the top, spreading evenly. Sprinkle with cheese.

6️⃣ Bake: Bake uncovered for 20-25 minutes or until the cheese is melted and bubbly.

7️⃣ Top & Serve: Let cool for 5 minutes, then garnish with sour cream and fresh cilantro. Serve warm and enjoy! 😋
