🛒 Ingredients

For the Chicken Marinade:

  • 🍗 1 lb (450g) boneless, skinless chicken thighs or breast, sliced thin
  • 🥄 1 tbsp soy sauce
  • 🌽 1 tsp cornstarch
  • 🥄 ½ tsp black pepper

For the Sauce:

  • 🥣 3 tbsp low-sodium soy sauce
  • 🍯 1 tbsp oyster sauce
  • 🍯 1 tsp honey (or brown sugar)
  • 🌽 1 tsp cornstarch + 2 tbsp water (to thicken)
  • 🌶️ 1 tbsp freshly ground black pepper
  • 🍋 1 tsp rice vinegar

For the Stir-Fry:

  • 🛢 1 tbsp vegetable oil
  • 🧅 1 small onion, sliced
  • 🧄 3 cloves garlic, minced
  • 🍄 2 cups mushrooms, sliced (shiitake, cremini, or button)
  • 🌿 1 green bell pepper, sliced (optional)
  • 🌱 2 green onions, chopped (for garnish)
  • 🌶 ½ tsp red chili flakes (optional, for heat)

👩‍🍳 Instructions

1️⃣ Marinate the Chicken:
In a bowl, mix chicken, soy sauce, cornstarch, and black pepper. Let sit for 10 minutes while you prep the other ingredients.

2️⃣ Make the Sauce:
In a small bowl, whisk together soy sauce, oyster sauce, honey, black pepper, rice vinegar, and cornstarch slurry. Set aside.

3️⃣ Sauté the Aromatics:
Heat 1 tbsp oil in a wok or large pan over medium-high heat. Add onion and garlic—stir-fry for 1 minute until fragrant.

4️⃣ Cook the Chicken:
Add the marinated chicken and cook for 4-5 minutes, stirring occasionally, until golden brown and cooked through.

5️⃣ Stir-Fry the Mushrooms & Peppers:
Toss in the mushrooms and bell pepper. Stir-fry for 3-4 minutes until softened.

6️⃣ Add the Sauce & Simmer:
Pour in the black pepper sauce and stir well. Let it cook for 2 minutes until thickened and glossy.

7️⃣ Garnish & Serve:
Sprinkle with green onions and extra black pepper. Serve over steamed rice or noodles!
