Upside Down Georgia Pecan Cake – Sweet, Nutty & Irresistible!

This Southern-inspired cake is moist, buttery, and loaded with pecans, creating a crunchy caramelized topping that pairs perfectly with the soft vanilla cake. A must-try for pecan lovers!

For the Pecan Topping:

  • 🧈 ½ cup (1 stick) unsalted butter, melted
  • 🍚 1 cup brown sugar, packed
  • 🥄 2 tbsp corn syrup or honey
  • 🥜 1 ½ cups pecan halves

For the Cake Batter:

  • 🧈 ½ cup (1 stick) unsalted butter, softened
  • 🍚 1 cup granulated sugar
  • 🥚 2 large eggs
  • 🌿 1 tbsp vanilla extract
  • 🥛 1 cup buttermilk
  • 🌾 2 cups all-purpose flour
  • 🥄 1 tsp baking powder
  • 🥄 ½ tsp baking soda
  • 🧂 ½ tsp salt

👩‍🍳 Instructions

Step 1: Prep the Pan & Topping

1️⃣ Preheat oven to 350°F (175°C). Grease a Bundt pan or 9-inch round cake pan.
2️⃣ In a bowl, mix melted butter, brown sugar, and corn syrup. Pour into the pan.
3️⃣ Arrange pecan halves evenly over the butter mixture.

Step 2: Make the Cake Batter

4️⃣ In a large bowl, beat butter and granulated sugar until fluffy.
5️⃣ Add eggs, one at a time, then mix in vanilla extract.
6️⃣ In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
7️⃣ Gradually add dry ingredients and buttermilk, alternating, until fully combined.

Step 3: Bake & Flip!

8️⃣ Pour the cake batter over the pecans in the pan. Smooth the top.
9️⃣ Bake for 45-50 minutes, until a toothpick inserted comes out clean.
🔟 Let cool for 10 minutes, then invert onto a serving plate while still warm.

Step 4: Serve & Enjoy!
